Honey Cake
1¾ cups
dark Honey
1 cup strong coffee
4 eggs
2 tablespoons
vegetable oil
1 cup sugar
3½ cups
flour
1 teaspoon baking
soda
2 teaspoons baking
powder
1 teaspoon allspice
1 teaspoon cinnamon
dash of salt
- Preheat oven to 325°F (162°C)
- Grease a 9½” x 6½” x 3” Loaf pan.
- Bring honey gently to boil. Cool, then add the coffee.
- Beat eggs until light and lemon colour, then add the oil, beating well to blend. Beat in the sugar.
- Sift all dry ingredients together and then add them to the egg mixture.
- Add the honey and coffee. Mix well.
- Pour smooth batter into prepared baking pan.
- Bake for about one hour, or until toothpick inserted near center comes out clean.
- Invert to cool in pan for 15 to 20 minutes.
Remove from pan.
Cool completely.
